I thought I would share a Savory Pumpkin Crêpe recipe created by the artiste, Awa Sow
Start with your favorite basic crêpe recipe. Add puréed fresh or canned pumpkin to the batter.
Cook the desired number of crêpes
Filling. This one includes ham (Prosciutto or other thinly sliced ham or cured meat will also make a good meat filling), onions, and cheese
Lay one crêpe onto a work surface. Layer the cheese, ham, and onions in the center of the crêpe. Fold crêpe sides to the center and place on a prepared baking sheet. Repeat with remaining crêpes. Bake 8-10 minutes until crêpes are hot and cheese is melted.
Drizzle each crêpe with our Blush Chardonnay confiture or Cuvée Nectar gelée for a savory,sweet balance. Serve with a salad for a prefect brunch/lunch or light dinner! Bon appétit.
